Dinner

Dinner can be challenging. 
The moment we walk through the door at 5:30 the kids are whining...fussing....STARVING. 
I have about 20 minutes to whip something up to fill their hungry tummies.
My sister told me about pancake muffins. 
And how easy and good they are.
Here's my take. 




Get out your ramekins or muffin pan. Spray with Pam
Mix some pancake mix and pour away baby.
Sprinkle with something yummy. 
(Baby Choco Chips, Breakfast Sausage, Bacon, etc.)
And bake. 350 degrees for 20 minutes.


Here is my plate. 




Just kidding. Add fruit and some bacon and call it dinner.



They liked it. 
I agree little ramekin.

  3. I agree 5:30 p.m. tends to be the most stressful time of the day! I used to work outside the home until 6:00 p.m., not home till 6:30-7, it was awful. AS a mom, you have to tell yourself that you just won't be able to make everything homemade. Dinner made at home is still better than grabbing fast food. I've learned to take advantage of the steamfresh frozen veggies and the Tyson precooked chicken strips. I can make fajitas in close to five minutes!

  5. I love breakfast for dinner. Thursday's are my worst day. I take my child to Karate and we don't get home until 6:30. I confess on real busy days we have had cereal for dinner. Does that make me a bad mom?

  6. Christina-the ramekins are from a Hallmark discount store that we have here in Kansas City.

    Glynis- we are having cereal for dinner tonight. no joke!
